About Us

Spare Thyme Farms is a small market farm in Waterloo, Illinois. We focus on no spray and low-till vegetables, herbs, flowers, and pastured raised chicken and quail eggs. Co-owners Bri and Josh Harlan met in 2014 while attending Southeast Missouri State University where Bri studied horticulture and Josh studied animal science.

After graduating we moved to Maine for a couple years where Josh worked in the dairy industry and Bri found her passion working on an organic veggie farm. We moved back to Waterloo to be closer to family and started our little business in 2021 with the dream of diversifying the land that has been farmed by Bri's family for the past three generations. So we built a small garden on a 1/4 acre of open crop ground, and have quickly expanded to include 1 full acre of field production and a small unheated greenhouse for winter season growing.

We believe in producing wholesome, delicious food for our family and now we feel so humbled to share it with our local communities. Selling our produce and meeting new people at farmers markets has been so rewarding after all the heart we put into our farm every day.

It's kind of hard for us to believe that we have already taken the leap to putting our products online too. We appreciate you so much for taking the "thyme" to check us out!
